Even if you've never been to China but you have been to Chinatown, Guangzhou should strike a familiar chord. That's because so much overseas Chinese culture is the legacy of immigrants from Guangzhou—formerly known as Canton—and the surrounding Guangdong Province countryside.
According to historical records, Chuting was the earliest formation of present Guangzhou. It has been 2,800 years since the Chuting was first used when Chu State of the Zhou Dynasty (11th Century BC - 221BC) sent ministers there to make it submitted to Chu.
Legend on the Ram City
There had been successions of famine and crop failure in Chuting during the Zhou Dynasty. One day, five colorful auspicious clouds drifted from the South Sea, conveying five celestial beings on five celestial rams. They blessed people with ears of rice in a sheep's mouth. The five celestial beings left but the five rams stayed in Chuting, continuing to protect local people and prayed for favorable weather and a good harvest. To honor the fairies, people built 'Wuxian Guan', a Taoist temple with their sculptures, accompanied by a stone statue of the rams. Hence, Guangzhou is also known as the 'Ram City' (Yang Cheng) or 'Rice Ears City' (Sui Cheng).
The City of Guangzhou
The Qin Dynasty (221BC - 206BC) conquered Lingnan Region and established three shires. Nanhai Shire included most of Guangdong Province with Fanyu, with the present Guangzhou as the capital. The site of the small city is located around Jiucang Xiang of Cangbian Lu in the present Guangzhou. Zhaolun took over Nanhai Shire in the early Han dynasty, which absorbed the surrounding area. Then Nanyue Kingdom was established and expanded into the city.
The city walls of Guangzhou were restored a dozen of times in the Song Dynasty (960 - 1279). Middle, east and west cities were built in succession. The Ming Court (1368-1644) brought the three cities together and called them the Old City, and constructed a new one in the south, through the second expansion project in late Ming.
Main Port of the Maritime Silk Road
Guangzhou has always been the political, economic and culture center of South China for more than 2,000 years. In its early years, it was a distribution center of rare tropical products. In the Han Dynasty (206BC-220AD), Fanyu had developed commerce and advanced textile and porcelain industries and foreign exchange with overseas, using Guangzhou as a vital port. During the Tang Dynasty (618-907), Guangzhou has become a world famous trading harbor with countries in the South Pacific Ocean and the Indian Ocean. To strengthen the foreign trade, China's earliest customs was set up in Guangzhou. It grew rapidly and became the largest commercial city and treaty port in China.
Since early 3rd century, Guangzhou has replaced Xuwen (in Zhanjiang City) and Hepu (in Beihai City) ports, ascending the throne as the main port of the Maritime Silk Road which initiated during Qin and Han dynasties until Quanzhou overshadowed it from late Song to Yuan (1279 - 1368). However, it recovered and was the only open port under the policy of isolation in the Qing Dynasty (1644-1911).
Guangzhou and Lingnan Culture
The word 'Lingnan' comes from the Eastern Zhou Dynasty (770BC-221BC), generally referring to Guangdong, Guangxi and the north of Vietnam. The nationality here was called Nanyue. In terms of geography, Lingnan Culture can be divided into three cultural branches in the Pearl River Drainage Area, Guangxi and Hainan. Guangzhou is the center of Cantonese culture along the Pearl River and the most outstanding of Lingnan Culture. The Cantonese dialect, Cantonese Opera, Lingnan calligraphy, art schools, architecture, miniascape, Cantonese cuisine, as well as music and handicrafts are all included in its scope.
In terms of the essence, aboriginal culture of Nanyue ethnic group, the ocean and the culture from Central China are major elements of Lingnan Culture. The people of Guangzhou prefer morning tea with dim sum. In addition, Guangzhou is representative of Lingnan architecture. Academy building ancestral temple of Ming and Qing dynasties, Xiguan Dawu (Xiguan Residential House) and Qilou Building (Arcade Building) of late Qing are all typical Lingnan style architecture, built in consideration of the climate and geography in the Lingnan Area.

Guangzhou is located in the middle south of Guangdong, north of the Pearl River Delta. Situated in China's subtropical area, the climate all the year is quite comfortable. With a moderate temperature all the year round, it is hard to give a clear division between the four seasons. It has a humid subtropical monsoon climate, characterized by warm winters, hot summers, little frost and snow, sufficient rain and sunshine. A yearly average 20C-22C (68F-72F) makes it a fabulous destination for traveling. However, the humid and hot weather makes it easy to suffer heat exhaustion.
The spring (March to May) is a rainy season, while the high rainfall period is during May and June. You'd better take your sweater and light clothes at this season. The spring China Import and Export Fair is held in April. The summer (May to September) in Guangzhou is relatively long, with the hottest temperature in July and August. There will be occasional typhoons and afternoon thunderstorms are frequent, so it is strongly recommended to always carry an umbrella with you. Water sport is the first choice at this season. You can not only relieve the summer heat, but also enjoy the ease and excitement of the water activities.
The days in autumn (September to December) are mainly sunny, cool and wet. The good weather of autumn often lasts to November and December; which is the best travel time. With the cool and comfortable weather, you can go to shopping at this season. Guangzhou is a shopping paradise with superior quality and attractive prices.
The winter (December to March) is a little chilly but short, and sweaters are enough for this season. Although the climate is moderate in Guangzhou, the solar radiation is quite great, so it is recommended to make good preparation for sunburn prevention. The winter in Guangdong, quite different from the northern part of China, is a sea of flowers. It is an excellent time for the flower-lovers to visit.
In terms of climate, the best time to visit Guangzhou is in October and November. Alternatively, April and May are also good months. Guangzhou has a sub-tropical climate with humidity levels at their highest in the summer, so unless you enjoy Turkish steam baths, this is a season to avoid! Typhoon season is from June to September. Please note that the Canton Trade Fairs take place annually in 3rd and 4th weeks of April and October, so finding accommodation at these times can be difficult (See the warning section under Sleep).

Baiqie Chicken (sliced boiled chicken)

The method of making it is easy. It is just well cooked but not mushy, retaining the original flavor. Firstly, choose local chicken below one kilogram and clear out. Fo Tiao Qiang
This is a kind of superior dish, whose original name is “Fu Shou Quan”. It was first created by eminent Juchunyuan Restaurant of Fuzhou during the region of Tongzhi in the Qing Dynasty. Fo Tiaoqiang is made of 28 kinds of fresh ingredients such as, abalone, sea cucumber, shark’s fin, fish maw, shark's lip, tendons, hams, dried scallop, dried mushroom and Shaoxing Wine etc. Put them into an earthen jar and seal up with mud. It takes more than 10 hours to stew with slow fire. The flavor is delicious and the sweet perfumes are diffused all around. It is a delicacy in autumn and winter. No wonder that one skillful writer in Qing Dynasty recite poems to praise “The fragrance float in the air even to the neighbor house when open up. The Buddha leap the wall as soon as smell the scent.” Fo Tiao Qiang is thus named.
Chinese Rice Pasta
The Chinese rice pasta is a kind of popular rice product. It was produced in Shahe Town earlier, with a long history over several hundreds years. The method of making it is that getting the spring water of Baiyun Mountain to soak rice. Then grind this rice and cook them. Cut them into long narrow strips. The Chinese rice pasta is spotlessly white, thin, pliable but strong. The methods of eating are dry-fry, wet-fry, heat with hot water, cold and dressed with sauce, etc. There is a special feast of the Chinese rice pasta in Shahe Restaurant. At present, there are 84 taxi companies in Guangzhou with more than 16,000 taxis in different colors, including the colors of yellow, blue, maroon and gold. Among those taxis, the yellow taxis of the Baiyun Taxi Company, the blue taxis of the Guangjun Group and the maroon taxis of Guangzhou Transportation Group are the most reputed.
A Guangzhou taxi charges CNY7 for the first 2.3 kilometers (1.4 miles), and CNY2.6 for succeeding kilometers. CNY1 is claimed as the fuel surcharge. You can bargain with the driver if you take a taxi at night. From Guangzhou Railway Station to Guangzhou New Baiyun International Airport, the taxi charge costs about CNY100; from Guangzhou East Railway Station to Baiyun Airport, you need to pay about CNY150; from Guangzhou Railway Station to Guangzhou East Rail Way Station, the taxi fee is around CNY25; from Fangcun Bus Station to Baiyun Airport, about CNY120 would be paid.
Tips: 1. It is very difficult to see an empty taxi in peak hours. In order to find an empty taxi more easily, you can wait at the special pick-up points for taxis. With the number of more than 230, the special pick-up points for taxis are signed and very easy to find.
Line 1: The Line 1 is made up of 16 stations. It is a very important vehicle to go to Guangzhou East Railway Station.
Line 2: There are 17 stations along the Subway Line 2. Start from its terminal Sanyuanli and you will spend about two minutes to reach Guangzhou Railway Station.
Line 3: The Line 3 is formed with one north-south-ward main rail and a northeastward branch. On the main rail, there are 13 stations and its branch includes 5 stations.
Line 4: It includes 15 stations, two of which are under construction – Guanqiao and Qingsheng stations. Now there are two sections on this line for the train's running.
However, these four subway lines cannot meet the needs of transportation. In order to solve the problem of crowded urban traffic, now the subway is under extension. Since 2004, Guangzhou subway has been extended at the speed of 35 kilometers per year. It is estimated that by 2010 Line 3, Line 4, Line 5, Line 6 and Line 8 will be all finished. The subway trains use Chinese mandarin, Cantonese and English to report station names. It is very helpful for the English-speaking passengers. Subway trains arrive at stations every about 3 minutes during the peak hour and every about 7 minutes after 21:00.

Yang Cheng Tong is a smart card mainly used in transportation. In Guangzhou, Yang Cheng Tong is widely used on bus, ferryboat, subway train, telecom business, etc. The area where Yang Cheng Tong can be used has been spread from downtown Guangzhou to Zengcheng, Huadu, Panyu and many other suburban areas of the city. There are eight types of these cards. Among them, the most suitable type for tourists is CNY30 Card without deposit. The card costs CNY10 and then you can add value to it. The highest value you add is CNY30 or CNY50 and each recharge should be a multiple of CNY10. The leftover value in the card is not refundable. No.1 Tour Line starts at Tianhe Bus Station and ends at No.8 Zhongshan Road and passes Sports Center, Time Square, Baiyun Rope Way, Yongfu Road, Huang Hua Gang, Nonglinxialu, Memorial Mausoleum to the Martyrs in Guangzhou Uprising, Former Site of Guangzhou Peasants Movement Institute, Sun Yat-sen's Memorial Hall, Sanyuan Palace, Panfu Road, North Haizhu, Liurong Temple, Chen Ancestral Shrine.
No.2 Tour Line starts at No.8 Zhongshan Road and ends at Tianhe Bus Station and passes Chen Ancestral Shrine, Hualin Temple, Southern Mansion, Wende Road, Dashatou, Xinghai Concert Hall, Xiancun Road.
Besides, travelers can go to Hong Kong Disneyland directly by taking a bus at the Hong Kong Disneyland Special Tour Line Station which is set at the Yitai Square, Jiefang Northern Road, Guangzhou.
Guangzhou water transport is mainly made up of Suigang Port, Zhoutouzui Port, Zengcheng Xintang Port, Panyu Lianhuashan Port and Nansha Port. On April 10, 2007, six water buses began to run along the channel of the Pearl River in Guangzhou, supplying residents and tourists with a more convenient transport service. There are four piers along the line - Zhongda Ferry Pier, Tianzi Ferry Pier, Xidi Ferry Pier and Fangcun Ferry Pier. The whole journey only takes 40 minutes - the ticket is CNY1-CNY2.
The water bus can accommodate 60 passengers. Except a slight shaking on the ferry, you cannot find any differences between water bus and the buses on land. Water bus is not only used as ferryboat but also a good choice to enjoy the beautiful scenery along the Pearl River. During the sail, you can see lots of characteristic architecture. Compared with the Pearl River Night Cruise, the cost of water bus is much cheaper.
For convenience, the water bus company installed GPS automobile station reporters at Fangcun, Xidi and Tianzi piers. In this way, passengers could know the arrival time of the water bus. The water bus is quite popular. Many Guangzhou citizens hope the water bus company opens more routes to go to some farside places, such as Zhujiang New Town and Panyu Lijiang Garden. As for this request, the transportation sectors of Guangzhou said they would provide more water bus routes.
Tip: It is very safe to take the water bus. Each water bus is equipped with enough life jackets and sea-sickness medicine and the like.
Guangzhou is the transportation hub of Southern China. The new Guangzhou Airport is an important International airport in China. Each day there are flights to all parts of China and some foreign countries. Guangzhou's highway system is also well developed. The region's sprawling road can take visitors to the whole country. Guangzhou New Baiyun International Airport (CAN) has been in operation since August 5, 2004. The new airport is located between Renhe Town of Baiyun District to the north and Xinhua Town of Huadu District to the east, 17 kilometers (10.6 miles) away from the old airport and 28 kilometers (17.4 miles) away from Haizhu Plaza, the center of Guangzhou City.
Flights from Guangzhou New Baiyun International Airport (CAN) connect Guangzhou with more than 70 domestic cities and over 20 international cities. The domestic flights go to Beijing, Shanghai, Xian, Kunming, Chongqing, Haikou, Chengdu, Hangzhou, Guiyang, Ningbo and Lianyungang, etc. The direct international flights are to Singapore, Kuala Lumpur, Bangkok, Osaka, Seoul, Ho Chi Minh City, Hanoi, Tokyo, Jakarta, Taipei, Hong Kong, Sydney, Amsterdam, Frankfort and Paris, etc.
Since March 22nd, 2007, passengers who pass directly through the territory of China on an international service or stay in Guangzhou less than 24 hours do not need a visa. They must however have a connecting flight and a booked seat.

Transportation from Airport to Railway Station
There are two railway stations in Guangzhou, including Guangzhou Railway Station and Guangzhou East Railway Station. Both railway stations are very important transportation hubs. Especially, the East Station is the transfer station from Guangzhou to Hong Kong. If you have already arrived at Baiyun Airport and wants to go to the railway station, you may adopt the following itineraries:

Jingguang (Beijing-Guangzhou) Railway and Jingjiu (Beijing-Hongkong) Railway run through Guangzhou. Guangzhou railway station is situated in the western ring-road. Travelers can get there by buses of No.7, 34, and 225.. It's very convenient. There are trains to the large and medium cities all over the country.
There are direct trains very 15 to 30 minutes from Guangzhou to Shenzhen which you can take at both Guangzhou Eastern Railway Station and Guangzhou Railway Station. The ticket is about 70 yuan per person. There are also direct passenger trains for Guangzhou to Hong Kong at Guangzhou Eastern Railway Station.
Guangzhou Railway Station
Guangzhou Railway Station is one of the rail transportation hubs in China. The 'Guangzhou-Shenzhen', 'Beijing-Guangzhou' and 'Guangzhou-Sanshui' railways meet here. The old site of Guangzhou Railway Station was set up at Dashatou, which was the terminal of Guangzhou-Shenzhen Railway. In 1951, it was moved to Baiyun Lu. In 1974, the new station was opened. At the very beginning, there are 35 couples of trains to go to or from it. In 1974, Guangzhou Railway Station was newly built on the Huanshi Xi Lu, northwest of Guangzhou. On April 4, 1979, the first through train between Guangzhou and Kowloon ran from Guangzhou Railway Station. Until 1998, the terminal of Guangzhou-Kowloon through train was changed to be Guangzhou East Railway Station in Tianhe District. At present, Guangzhou Railway Station provides the trips to Beijing, Zhuhai, Shenzhen, Maoming, Wuhan, Nanjing, Chengdu, Chongqing, Hanzhong, Wenzhou, Xiangfan, Xian, and Lhasa and many other Chinese mainland cities.
The Yuehai Railway passes through Guangzhou Railway Station, which connects Guangzhou with Sanya. This cross-sea railway brings much convenience to the tourists, who want to go from Guangzhou to Sanya by train. At present, there are three trains each day go from Guangzhou to Sanya, including Trains No.K512, T202 and K408.
The railway station can be reached easily by city buses. There are many wholesale markets near the Guangzhou Railway Station. The meeting place of the Canton Fair and Yuexiu Park are located to the south of the railway station. Only ten minutes will be spent to walk from the railway station to there. The Provincial Passenger Transport Station and Liuhua Bus Station are not far from the station. It is very convenient for the transfer passengers from Guangzhou to other cities by coaches.

Guangzhou East Railway Station
Guangzhou East Railway Station, named Tianhe Railway Station originally, is situated on the Linhe Zhong Lu, Tianhe District. It is opposite Zhongxin Plaza and the tallest building in Guangzhou. Built in 1910, it is 8 kilometers from Guangzhou Railway Station and 139 kilometers from Shenzhen Railway Station. It is a very important station on the Guangzhou – Shenzhen Railway. Also it is the terminal of Guangdong – Kowloon, Hong Kong Through Train. From Guangzhou to Hong Kong, the through train just takes you about two hours to reach Hung Hom Station in Hong Kong. Please note that before you get on the through train, you are required to go through the entry formalities at Guangzhou East Railway Station.
Guangzhou East Railway Station is made up of the plaza, the passenger transport building, the tower building and the station yard. The plaza in front of the passenger transport building is three-storied, including the overhead storey for pedestrians, the automobile storey and the underground storey. The passenger transport building covers an area of about 114,197 square meters, which is the main building of the railway station. It’s a four-storied building. The first floor is the location for the Guangzhou-Shenzhen train ticket office, the Guangzhou-Kowloon train ticket office, the five Guangzhou-Shenzhen automatic ticket vendors, the waiting hall for Guangzhou-Shenzhen passengers, the luggage checking office for Guangzhou-Kowloon passengers and the luggage office for China mainland passengers. The central zone on the second floor is the hall for dispersing passengers. On its west is the ticket office for long-distance trains; on its east are five VIP rooms. On the third floor, the ticket office, Guangzhou-Kowloon passengers' pre-inspection waiting hall and the waiting hall for long-distance trains can be seen. On the fourth floor, its west part with an area of 9,742 square meters is the joint inspection hall and another zone with an area of 8,066 square meters is the China mainland passengers' waiting hall.

How to get to Guangzhou East Railway Station:
Ticket demand always exceeds supply when the Spring Festival and the other national holidays are coming. Usually, railway stations sell tickets four days ahead of your departure date, while ticket agencies start to sell ten days (the departure date counted in) in advance. Anyway, the situation is not always the same. You'd better inquire the related information as early as possible.
There is a developed highway system in Guangzhou. Guang-Fo(Guangzhou-Foshan) Highway and Guang-Hua Highway were put into use in succession. Now, there are more than ten coach stations in Guangzhou offering plenty of coaches to different cities and counties in and out of Guangdong Province.
Guangzhou Provincial Passenger Bus Station is the largest bus station in Guangdong province. Buses depart here daily to the neighboring Guangxi, Hunan, Fujian and Jiangxi Provinces. There are also deluxe buses to Shenzhen, Hong Kong and Macau. The easiest way from Guangzhou to Hong Kong is by the deluxe bus following along the Guangzhou-Shenzhen freeway in 2.5 hours.
Trains cover the 182 kilometers from Hong Kong in about two hours (including a stop at Dongguan). Through Trains to Guangzhou depart from Hong Kong at Hung Hom railway station in Kowloon and arrive in Guangzhou at the East station in Tian He district. Trains operating on this service are operated by China Rail and the Hong Kong Mass Transit Railway Corporation (MTR). Since the merger of the Kowloon Canton Railway Corporation (KCRC) and the MTR, Hung Hom station and Hong Kong ticket sales are controlled by the MTR .
It is faster and cheaper to take the high speed train (200 km/h) from Shenzhen to Guangzhou. Shenzhen is right across the border from Hong Kong and thousands of people walk over the bridge between the two every day. China High Speed train tickets are numbered D8## and can be bought from ticket counters or machines.
A project is underway to link the entire Pearl River Delta area with high speed (200+ km/hr) train network. The Zhuhai-Guangzhou section is due to open in 2008, and the journey will take just 56 minutes. Shenzhen is already connected. This is part of a nation-wide high-speed network that is under construction. Eventually, this will allow a 12-hour Guangzhou-Beijing ride.
A new express line connecting Guangzhou with Lhasa, Tibet is now open. The 4,980 km journey will take 58 hours. (¥869 and up.)
Bear in mind there are two major train stations in Guangzhou. The Guangzhou East Station services routes to Hong Kong, and other popular tourist destinations. The Guangzhou Station is one of the biggest in the country and services routes that go all the way to Harbin. Countless travelers have gone to the wrong station and missed their scheduled trips. So be sure to know which train station to go to, which is specified on the tickets. Metro line 1 ends at Guangzhou East Station, and line 2 has a stop at the main station.
Note that there is little English signage at the train stations, and staff may not speak it (except at the Guangzhou-Kowloon counter)- bring a phrasebook or a Chinese friend if you're planning on traveling deeper into China.
Guangzhou is located by the Pearl River. Boats sailing along the river can take visitors to Hong Kong, Macau, Haikou and Sanya.
There is a frequent ferry and hovercraft service from Hong Kong, Macau, and Haikou (Hainan Island) at the Zhoutouzui Ferry Pier. There are boats from other mainland cities, such as Xiamen, Shanghai, and Qingdao at the Dashatou Pier.
New Nansha Pier is now open with 6 lines daily traveling between Hong Kong and Guangzhou. The trip takes 75 minutes (¥116-230). However, Nansha is very far from the city center, although there is a bus route available from White Swan Hotel, running three times a day. Location Nansha Port: 1.6km South from Humen Bridge, Nansha District, Guangzhou. Passengers can take buses at White Swan Hotel to the Dock, 3 runs per day.
